Help

So over the years I've switched between a 3x12 and 5x5 routine. I've gotten stronger but am hitting a plateau which has made me question my workouts. I do full body 5 days a week. Rest on weekends. I'm 6'4 190 and have been trying to break and stay above 200 consistently but my weight dips between 185-200 all the time. Should I continue my 5x5 workout maybe not do full body? Idk what else to do tbh. Can give more info if anyone is willing to help with suggestions. Please ands thanks
